The Sagrantino grape is so rich in tannins that it lends itself well to becoming a passito sweet wine. The Bocale winery collects the grapes in mid-October and leaves them to dry in the cool air for at least two months becoming raisins, before moving on to the fermentation process where they are then aged in barrique for 24 months. The result is a fabulous passito that can be combined with desserts and aged cheeses. 0.375 liter bottle.
