The Canaiolo grape is usually blended with Sangiovese to "soften" the Chianti. It is rarely produced in 100% purity, but thanks to perfect timing of the harvest and the fermentation temperatures, the oenologist at Podere Fornace Prima, manages to produce a surprisingly pleasant wine. The result, a red on the sweeter side, meant to drink fresh (recommended serving temperature: 12-14º Celcius or 53.6 – 57.2º Fahrenheit) and to be paired with white meats and aged cheeses.
