
Pinot Noir is not an easy wine to make and not a wine for everybody, but those who like will take great satisfaction from this bottle by Le Due Torri.
The wine is made with 30-year old vineyards on a sandy loam soil. After the manual harvest in the first 10 days of September the fermentation starts and lasts around 20 days.
At the end of the fermentation Le Due Torri's Pinot Noir is transferred to French oak barrels (500 liters) where it will rest for 20 months with weekly batonnages.
In the glass you will see the typical pale red colour of Pinot Noir.
Cherry and dried prune to the nose; warm and rich in nuances to the palate.
Very good persistence.
PAIRING: great with salmon and other fatty fish, chicken and risotto when young. To enjoy with game and cheese when at least 5-6 years old.
