Perricone is the newborn at Baglio Diar. Perricone is a grape variety that for long time was the most popular in Sicily and it was now time to rediscover it.
It is produced close to Trapani on clay soil in vineyards that face the sea with a nice, constant breeze.
After the manual harvest, done by night to avoid the heat, the fermentation starts with controlled temperature. At the end of it the wine is transferred to barrique barrels where it will evolve for 6 months followed by few weeks in steel before getting bottled.
Perricone Velata has an intense red ruby colour with blackberry, leather and cocoa powder aromas. It's a totally surprising and unusual bouquet.
To the palate it's vibrant, rich in acidity and spices with a light coffee after taste.
A nice discovery for surprising your friends.
PAIRING: surely great with grilled meat, baked lamb and aged cheeses. Also try it with game stewed in a pan with black olives and aromatic herbs.
