We like to call Time Machine from Le Due Torri an unusual and magical wine.
It's a recipe that masterfully blends native and international varieties that in Friuli grow at their best.
The manual harvest is followed by a 24 hour maceration. After the fermentation the wines ages in barrels (500 liters tonneaux) of three different types of wood: cherry, mulberry and French oak.
The 8 month aging is made with the so called perpetual method: that means that the wine from the previous vintages is mixed with the new one. This way the wine has a strong personality and still maintains the peculiarity of the last vintage.
It's like a real time machine!
It presents itself in a deep and bright golden yellow colour.
Orange peel, peach, salty butter and fresh flowers to the nose.
To the palate it is fresh and smooth.
It's a very minerale wine with good structure that can age another 4-5 years in the bottle.
PAIRING: it pairs well with appetizers, fish, spicy cheeses
