The Canaiolo grape is usually blended with Sangiovese to "soften" the Chianti. It is rarely produced in 100% purity, but thanks to perfect timing of the harvest and the fermentation temperatures, Podere Fornace Prima produces a surprisingly pleasant wine.
The result is a very harmonic wine meant to drink fresh (recommended serving temperature: 12-14º Celcius or 53.6 – 57.2º Fahrenheit).
If you will give it time to open up (around 1 hour) you will discover incredible balsamic notes.
