
Baglio Diar's Lumìe is a little gem of aromas and bubbles from Sicily, made using the ancient method of bottle fermentation without disgorgement.
Catarratto grapes are harvested during the first nights of August, and after a very gentle pressing, they are fermented at a controlled temperature (13 degrees Celsius).
After a few days, fermentation is interrupted by lowering the temperature, preserving some yeasts and sugars that will lead to the re-fermentation in the bottle.
After at least five months in the bottle, Lumìe is ready to be tasted and loved.
Its aromas are distinct: citrus, banana, green apple, and elderflower.
On the palate, the citrus notes make it ideal for aperitifs, while the honey and almond notes that emerge later allow it to become an excellent companion throughout a meal.

PAIRING: Lumìe pairs well with fried foods and fish-based dishes. It's also worth trying with roast pork seasoned with honey.
