
Cascina Rossa's Dolcetto is simple and cheecky. It is made with the family vineyards located in Diano d'Alba, a small town in the Langhe wine district which is recognized as the best area for Dolcetto.
After a fermentation of 5-6 days with 2-3 batonnage per day the wine will rest shortly in steel.
This Dolcetto has a wonderful ruby red colour with violet tinges. Cherry aroma and nice creamy taste. Medium persistence.
PAIRING: since the tannins are quite delicated and the acidity is under control this wine is very easy to match. It goes well with cold cuts, starters, pasta and not too fat meat courses. Fresh and medium-aged cheeses too.
