Diotisalvi's "Assolato" is en exciting natural sparkling wine made with the ancestral method (second fermentation in the bottle without disgorgement).
The grapes are Bronner (PIWI - fungus resistant wine) and grown with passion by this young winery from Veneto. "Assolato" is organically and Demeter certified.
Manual harvest between the end of August and the beginning of September.
Before the fermentation with native yeasts the juice rests with the skins for 12 hours at 6 degrees for more extraction.
Thanks to the small dimension of the winery and of wine the process is completely artisanal and without added sulphites.
At the end of the fermentation the wines rests in concret vats and is bottled few weeks later. The second fermentation will take place in the bottle on its own yeasts.
"Assolato" is a joyful and amusing, fruity wine with pear and apple aromas together with bread and butter fragrances.
IMPORTANT NOTE: We strongly recommend not shaking the bottle a couple of hours before opening it because, being a completely natural wine without stabilizations, small refermentations may occur in the bottle. Open with caution, allowing it to ‘degas’ little by little. These small precautions are also part of the tasting experience of such a particular wine.
