Borgogno Francesco's Nebbiolo is a wine crafted with minimal extraction during fermentation.
The winery's goal is to highlight all the fragrant elegance of Nebbiolo, avoiding excessive extraction and maturation.
Fermentation takes place at 26-30°C for 10-12 days. At the end, the wine is racked into stainless steel tanks, where it settles for 4 months before bottling.
True to form, Borgogno's Nebbiolo has a bright yet transparent red color.
On the nose, the floral and subtly spicy aromas are both engaging and delicate.
In the mouth, the wine unfolds in a thousand facets, with the typical harmony of the grape variety taking center stage.
Very good persistence.
PAIRINGS: mushroom risotto, wild boar ragù fettuccine.
