Podere Casina's Aione is a 100% Sangiovese produced on sandy and marlstone soil with organic agricolture and biodynamic fertilization.
The yields of the vineyard is deliberately low in order to have less quantity but higher quality. The vines are in average 30 years old and provide very rich and fleshy grapes.
The fermentation is totally natural without additional yeasts and is followed by 12 months in third usage tonneau, so that the oak is not too intrusive.
Podere Casina's Aione is juicy and dominated by the elegance of Sangiovese, specially if you leave the wine few minutes in the glass. Violet and cherry followed by earth and vanilla scents.
Full bodied in the mouth with long persistence, like all great Tuscany wines.
PAIRING: it goes great with pasta with wild boar sauce, the typical local dish
