Most of the vines used to produce this Etna Rosso are ungrafted (pre-phylloxera) and grow on volcanic soil rich in minerals and sand at 750 meters above sea level.
Pruning, which reduces buds to just two per cane, sets the focus on quality, continuing with hand-harvesting and careful selection of the finest grapes, for a total yield of just 4000 kg per hectare.
Vinification is exclusively in steel, preserving the fruit of the grapes: cherry and raspberry on the nose, accompanied by the typical mineral notes abundant in Etna's soils.
Great breadth in the mouth and a very long finish.
PAIRINGS: lamb, pork stew.
