Fonteascosa is the result of a collaboration with La Battinebbia, a neighboring vineyard of Brunori, and stems from the rediscovery of an ancient, nearly abandoned vineyard that benefits from excellent soil-climatic conditions.
In the vineyard, cultivated organically, Verdicchio, Malvasia, and Trebbiano vines grow together, as was done in the past.
Following the same pattern, a winemaking method reminiscent of the old times was chosen, with spontaneous fermentation on the skins for a few days. Fermentation then continues at controlled temperature with a rest on the lees for about 3 months, followed by a long settling period that allows avoiding invasive filtration processes.
The three varieties blend perfectly in Fonteascosa: the Verdicchio's slight bitterness is softened by the Malvasia's aromatic notes, while Trebbiano provides structure.
Citrus and almond on the nose, then flowers and acacia honey that return fully coherently on the palate.
