For Chessa’s Cannonau, the winery has chosen a winemaking approach as true as possible to the authenticity of the grape variety.
Starting from a very low yield (6,000 kg/ha) and calcareous-clay soil, winery work includes controlled-temperature fermentation and maturation in stainless steel, including malolactic fermentation.
Aromas of cherry and Mediterranean shrubs softened by spices; on the palate it’s fresh yet full-bodied, gaining intensity after a few minutes in the glass.
FOOD PAIRING: Perfect with the traditional roast suckling pig, but also grilled meats and medium- to long-aged cheeses.
