There is a long tradition of Syrah production in Lazio, both on volcanic soils and on clays, as is the case at Il Vecchio Poggio.
More precisely, clay and limestone — thanks to a local stone called puddinga, which gives this wine its name.
The grapes are harvested slightly overripe, about ten days after full phenolic maturity.
In the cellar, fermentation is supported by a specially prepared pied de cuve and lasts around 20 days, with skin maceration and repeated pump‑overs.
After racking, the wine is transferred into terracotta amphorae, where it matures for almost two years.
Puddinga offers aromas of spices and wild nature, with pleasant notes of licorice and coffee on the palate.
PAIRINGS: beef stew with aromatic herbs, cecapreti with goat ragù (a traditional dish from Ciociaria, Southern Lazio).
