Cuore di Marchesa's Etna Bianco is made from Carricante grapes plus a blend of local varieties that grow spontaneously between the rows. Most of the vines are ungrafted (pre-phylloxera).

The vineyard is located at 750 meters above sea level on the northern slope of Etna, on volcanic soil now rich in sand and organic substances.
The rows are interspersed with lupin and fava bean cultivation to promote natural soil fertilization.

The great care taken in producing this wine begins with pruning to just two buds per cane.

Harvesting is strictly manual, followed by 8-10 hours of maceration at 8°C to enhance extraction from the skins.
Fermentation is spontaneous with indigenous yeasts present in the winery and lasts about 25 days, after which the wine rests in steel for 10 months.

Citrus and mineral aromas (flint) on the nose, with great intensity and full mineral depth on the palate.
