L’Imbevibile is at once Claudio Mariotto’s most ancient and most experimental wine.
It is an orange wine, meaning a white wine vinified like a red, with skin‑contact maceration. This process gives the wine its typical orange hue and much more pronounced aromas.
The grapes for Imbevibile come from the San Michele vineyard.
After selecting only the healthiest and most beautiful clusters, the winemaking involves 15 days of skin maceration and spontaneous fermentation, followed by racking into amphorae where the wine rests for 12 months.
The resulting wine—bottled outside any denomination—is amber‑yellow tending toward orange, dense and rich in aromas recalling citrus, candied fruit, and spices.
On the palate it is dense, satisfying, and perfectly clean in flavor despite its wonderfully self‑ironic name ("imbevibile" means "undrinkable").
