The rediscovery of Bellone is a wonderful opportunity to bring attention back to Lazio’s native white grape varieties.
Massimo Caucci of the Solis Terrae winery has always believed in this potential, and today his Bellone—bottled under the Roma DOC designation—is an excellent example of how to handle this still relatively rare grape: with simplicity.
In truth, this wine benefits right from the start from its geographical location, perched atop a small hill in the open countryside between Lake Bracciano and the Tyrrhenian coast.
Added to this is a splendid spectrum of mineral aromas bestowed by the volcanic soil.
The winemaking process is simple yet meticulous: cold static settling of the juice followed by fermentation at 18°C.
After 6 months of aging in stainless steel tanks, the wine is bottled and two months later is ready for the shelf.
This wine reveals its savory, saline character from the very first moment it reaches the nose, accompanied by that pleasant fruity note (predominantly peach) typical of the variety.
On the palate, those rich mineral notes return, renewed as you run your tongue across your lips.
PAIRINGS: Classic Roman pasta dishes like cacio e pepe (pasta with Pecorino Romano cheese and black pepper) and carbonara; grilled fish, shellfish.
